No Carb Pizza


Preparation time: 15min, Cooking time: 45min



What do you need:

1 eggplant
1 onion (chopped)
1 can of crushed tomato
1 clove of garlic (chopped)
4-5 basil leaves
200g rasped cheese
1 pinch of salt and pepper
1 teaspoon of sugar
Oil for the pan

1. Heat oil over medium high heat in a saucepan. Add a chopped onion and sauté it for about 2 minutes until its pieces are soft but not browned.

2. Now add a can of crushed tomatoes, basil leaves, and a chopped clove of garlic. Add the seasoning as well as one tablespoon of sugar and let it simmer on low heat for about 15 min or until it thickened. If you like the sauce to be spicy, you can cautiously add some chili.

3. Meanwhile wash and cut the eggplant in about 1cm thick slices. Put some oil in the frying pan and heat it up. Then add the eggplant-slices and fry it for about 2 min on each side.

4. Lay the slices on the baking tray of your oven and place the tomato sauce with a tablespoon on each of the eggplant slices. Finally you sprinkle them with cheese and bake it all for 30min at 200°C in the pre-heated oven.
