German Doughnuts






Working time: 35min; Waiting time: 1h;  Baking time: 4 min; Yield: 12 Doughnuts




What do you need:


500g flour
40g yeast
250ml milk
4 eggs (only TWO egg yolks)
70g sugar
75g butter
salt
(rosehip-) jam for the filling
some powder sugar for decoration


1. Mix the yeast with 30g sugar until it becomes a homogeneous mass. Then stir in the flour with 125ml warm milk in a bowl and let rise for 15 minutes.

2. Melt butter, mix the eggs and sugar and add 40ml milk. Knead well and successively form palm-sized balls. It yields about 12 pieces. Now, cover them with a towel and let rest for about 45 minutes.

3. Heat oil to 160 degrees and bake each ball for about 2 minutes on each side until golden brown.
(HintIf you insert a wooden spoon into the oil, the oil will bubble around the stick when it's ready for frying.)

4. Finally, take a pastry syringe, fill the donuts with your favorite kind of jam and cover them with some powder sugar.
