Quinoa with Mushrooms and Paprika in Curry Sauce


Preparation time: 10 min, cooking time 30 min




What do you need:

1/2 cup Quinoa

1 cup Water
1 Onion
1 Paprika
250 g Mushrooms 
300 ml Coconut Milk
Oil for the pan, Salt, Pepper, Curry Powder

1.Rinse quinoa with water, then start cooking it in boiling salty water. Add a pinch of sugar and leave to swell.


2. Meanwhile dice up the onion and start frying it together with a sliced paprika and the sliced mushrooms for about 5 min. 


3. Now add the coconut milk to the vegetables, reboil and season it with salt, pepper and curry powder. For the ones who like it a little spicy, also add a pinch of dried chilly. Cook now for about 10 min on medium heat.


4. After 20 min the quinoa is done swelling and can be served as a side dish when it's tender.
