Tofu Burger and Homemade Fries


Tofu soaking time: 1 day; Preparation time: 25min






What do you need:

200g extra firm tofu
1/4 cup whole grain flour
1/4 cup fine corn meal
1/3 cup quick oats or rolled oats
1 onion
2 cloves garlic
1 vegetable stock cube
2 Tablespoons curry powder
1 whole grain bread roll
2 big potatoes
1 tomato
2 lettuce leaves
Oil, salt, pepper, mayonnaise, ketchup


Prepare the tofu:

1. Drain the tofu, rinse it and blot dry with a paper towel to soak up excess moisture.

2. Cut tofu into 1 inch cubes. Crumble the stock cube and add together with two minced garlic cloves, curry powder, salt and pepper in a box with a lid.

3. Cover everything with oil and mix the spices with the tofu with your hands. Shut the box with the lid and leave it to soak in the refrigerator for at least a day.

(If you like it spicy, add some minced chili - but BE CAREFUL :P )


Now to the burgers:

4. Get the soaked tofu from the refrigerator, open the box and add: a diced onion, flour, corn meal and oats.

5. Start mashing with your hands, and mix well by hand just until the mixture starts to clump together. Don't over mix.

6. Form into six patties.


7. Fry in small amount of oil, on medium heat for 5-7 minutes on each side, or until golden brown.

8. Serve them in a broiled bread roll with lettuce, a slice of tomato, and some ketchup and mayonnaise.


To the fries:


1. First wash the potatoes, peel them and wash again.

2. Cut the potatoes with a sharp knife into strips, such as purchased fries.

3. Fry them for about 10min in enough oil, so that potato strips are almost fully covered.

4. When they are tender, place them on a paper towel to get rid of the remaining oil on the fries.

5. Bestrew them with salt and...
